Favorite 3 Chicken Recipes to Show You Care

Have you ever noticed that eventually everything always boils down to food?

It’s how you show your family and friends that you care. Someone is ill, you make soup; someone is having a celebration, you make something sweet; your friend had a hard week at work, you invite him or her over for dinner!

Cooking healthy with all natural food is one of the greatest gifts you can give!

Thought I’d share three of my favor

ite super quick dinner recipes …

GARLIC SAGE CHICKEN

4 Pieces SimplyFineGourmet antibiotic free chicken breasts

1 ½ tsps of dried sage leaves

6 garlic cloves unpeeled

A few pinches of Kosher salt and pepper

1 cup of boiling water to quickly blanch garlic cloves

2-3 tbsp of olive oil

1/3 cup white wine

Defrost 4 pieces of chicken breast in cool water (about 10-15 minutes)

While chicken is defrosting, boil one cup of water

Once the water has boiled, throw in the garlic for 45 seconds only

Take out and immediately run them under cold water, then peel off skin

Lightly salt and pepper the chicken and sprinkle ½ tsp of sage over all 4 pieces

Saute on medium flame in olive oil for 1 minute per side

Take out of pan and set aside on plate

Lower heat under pan and put all 6 garlic cloves in pan

Smash them with a fork and pour in the 1/3 cup wine

(Have a sipper yourself, if you desire)

Scrape up the brown bits and let alcohol evaporate for 1 minute

Place chicken back in pan and cook for 1 more minute on low flame

Serve with asparagus and roasted red potatoes

CHICKEN ASIAN STIR FRY

Sauce For Chicken:

Teriyaki Sauce or Soy Vey (which ever is your preference)

Sauce for Vegetables:

¼ cup soy sauce

¼ cup Mirin rice cooking wine

1 tsp. powdered ginger or ½ tsp grated fresh ginger

1 heaping tbsp chili garlic sauce (Asian section of grocery market)

2-3 tbsps olive oil or grapeseed oil

1 package of Asian chopped vegetables (in fresh produce section)

You can also add (optional)

1/2 fresh white onion sliced

Fresh sugar snap peas

Defrost 4 pieces of chicken in cool water and slice chicken in long pieces

Put them in a medium size bowl with the Teriyaki or Soy Vey for 15-30 minutes, then combine all ingredients for vegetable sauce and put aside

Get a large wok or fry pan and put in olive oil and raise the heat to high

If you’ve added onions put those in first for 3-5 minutes until transparent

Add your vegetables and your sauce and stir-fry for another 5-6 minutes until

fragrant and the vegetables are not soggy

Put cooked veggies in a clean bowl cover with foil and put aside

Use same pan and stir-fry chicken for 2 minutes (do not overcook)

Combine or serve chicken on top of veggies

Serve with ‘heat-and-serve’ brown or white rice (both are available in the frozen section from Trader Joes)

LOW FAT CHICKEN PARMESAN

4 pieces of SimplyFineGourmet antibiotic free chicken

1 ball of lite mozzarella cheese (can also use buffalo mozzarella)

2 Cups of Panko breadcrumbs

1 cup of Cornflake Crumbs (usually in the baking aisle of grocery store)

½ cup of grated Parmesan cheese

1 ½- 2 cups of Marinara

Preheat oven to 350 degrees

Place the flash frozen chicken in a bowl of cool water for 5-10 minutes to thaw.

While the chicken is thawing, mix the Panko breadcrumbs, cornflake crumbs and the Parmesan Cheese together in a large bowl

Remove the chicken from packaging and dredge it in the breadcrumb mixture

Place chicken on a cookie sheet in preheated oven and cook for 15-20 minutes (depending on how hot your oven runs)

While the chicken is baking, pour marinara in a saucepan to heat up and slice your mozzarella cheese in 1/8-1/4 inch slices

Once the chicken is done, take a large tablespoon and put approximately 2-3 tablespoons of marinara on each piece of chicken. Next lay a piece of mozzarella cheese on top of each piece and put back in oven for about 1 minute until cheese melts (watch closely-you do not want to overcook the chicken)

Serve with steamed broccoli and baked potato
